Striped Bass with Parmesan Couscous and Vegetables

You’ve told us that one of the things you love most about our LoveTheWild fish kits is that there is almost no cleanup. We love that too! We also love this recipe for a fantastic side dish that you cook inside the parchment paper pouch or, en papillote right alongside your fish. Now your whole dinner can be cooked with little to no mess and in less than 25 minutes!

 

Striped Bass with Parmesan Couscous and Vegetables
Makes 1 serving
Prep time: 10 minutes

Cook time: 20-25 minutes

Ingredients:
1/4 cup whole wheat couscous (Plain)
1/2 cup hot vegetable broth or water
(Combine well in a mixing bowl, then set aside)
1/4 medium red bell pepper, julienned
1/4 medium green bell pepper, julienned
2 slices of fresh, ripe tomato
1 tablespoon grated Parmesan cheese
1 tablespoon minced parsley
1/2 tablespoon extra virgin olive oil
1/2 teaspoon minced garlic
1/4 teaspoon salt
1/4 teaspoon ground pepper

2 tablespoon water for drizzling

Instructions:

Mix water and couscous and set aside while prepping additional ingredients. After water is absorbed, stir in parmesan, parsley, garlic, EVOO, salt, and pepper. Add This mixture to the parchment paper that comes with your kit. Place peppers on top of the couscous mixture then add the tomatoes on top of the peppers. Drizzle remaining water around the perimeter of the couscous and vegetable stack. Remove the fish fillet from the plastic and place on top of the vegetables. Add sauce pucks to the fish and seal the parchment paper tightly as shown on the box.

 

Bake according to package instructions.
