Coconut Jasmine Rice Recipe

Looking for a taste of the Caribbean to warm your belly and satisfy your soul? A beautiful and light accompaniment to our Barramundi with Mango Sriracha Chutney, this simple recipe for Coconut Jasmine Rice is delicious and super easy to make.  Plus you won’t feel weighed down after eating this tasty meal, so you’ll have plenty of energy left to dance to those steel drum beats.

Serves 3 ‐ 4

Ingredients:

  • 2 cups jasmine rice
  • 1 can coconut milk
  • 1 1/2 – 2 cups of water
  • 1 1/2 teaspoon sea salt
  • 1 teaspoon coconut sugar

Preparation:

Rinse the jasmine rice in a medium-sized pot with cool water until the water runs clear. Drain the rice, and add the coconut milk, water, salt and sugar.

Bring to a boil over medium-high heat and stir to combine all ingredients. Then cover and reduce to low heat.

Cook for 20-25 minutes or until the rice is tender. Fluff with a fork and enjoy right away, or cover until ready to serve.
